How have grocers’ cooking
equipment needs changed in
Tami Olson: The way customers
shop has had a direct impact on
retailers’ equipment needs. Today’s
shoppers are limited on time and
are looking for healthy, convenient
meal options for themselves and
their families. This is placing an
increased demand on deli departments, requiring more productivity
from cooking equipment.
It is also placing a greater
demand on production, creating
the need to efficiently manage/
lower labor costs. Ovens with self-cleaning options are in hot demand
because the ovens can be used for
the majority of the day and the self-cleaning function can run at night.
Additionally, we are beginning to
see more heated merchandiser and
display cases that are easy to operate with individual shelf temperature
controls for ultimate flexibility. Lower
operating costs are also essential
as operators run these units all day—
sometimes up to 16 hours a day.
